Chickpea Pasta with Roasted Zucchini and Basil



gluten free, dairy free

{makes 4 servings)

I N G R E D I E N T S:

  • 1 Box Banza Chickpea Pasta
  • 6 Zucchinis, washed and sliced (mixture of yellow and green, or just one color is fine if you prefer)
  • 1/2 cup chopped basil
  • 2 tbsp Ghee
  • Salt & Pepper

I N S T R U C T I O N S:

  1. Cook the pasta in salty water until al dente (7-9 minutes) and drain. Rinse pasta with cold water. While pasta is cooking heat a large pan with 2 tbsp ghee.
  2. Add washed and sliced zucchini to the pan and sprinkle with salt and pepper. Cook for 8-10 minutes, stirring frequently. 
  3. Add pasta into the pan with the zucchini, and stir together. Add additional salt and pepper, and generously pour olive oil on top. Mix in the basil and serve.
