Paleo Walnut Chocolate Chip Cookies

gluten free, dairy free, sugar free, paleo

{makes 9 cookies)

I N G R E D I E N T S:

  • 1 3/4 cup walnuts

  • 3 eggs

  • 3 tbsp melted coconut oil

  • 2 tbsp coconut flour

  • 1 tsp cinnamon

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp sea salt

  • 2 tsp stevia (about 2 packets)

  • 1/2 cup lily’s dark chocolate chips

I N S T R U C T I O N S:

  1. Soak walnuts in water overnight in the fridge (see post in the “lifestyle” section to learn why it is important to soak nuts).

  2. In the morning (or whenever you’re ready to make the cookies the next day), drain and rinse the walnuts with water.

  3. Preheat the oven to bake at 350 degrees.

  4. Blend the walnuts in a blender until they are completely chopped and crumbly. You may need to stop the blender a few times in between and mix the nuts so that they don’t get stuck. This process should take about one to two minutes.

  5. Once blended, the nuts should now measure out to roughly one cup.

  6. Transfer the blended walnuts to a larger mixing bowl and add the remaining ingredients (except the chocolate chips): eggs, coconut oil, coconut flour, cinnamon, baking powder, baking soda, sea salt and stevia and mix thoroughly.

  7. When the ingredients are completely mixed together, add in the chocolate chips.

  8. Lightly coat a baking tray with coconut oil or coconut oil spray.

  9. One by one, scoop a spoonful of batter onto the baking tray. You don’t need to shape the cookies, but you can slightly pat them down with the back of the spoon. The batter should make about 9 cookies.

  10. Bake for 10 minutes, let cool, and enjoy :)
